Charcuterie Class - Metcalfe Road, Matakohe, Kaipara
We would like to introduce you to the world of Charcuterie, the original 'slow food'. Charcuterie is the branch of cooking devoted to prepared meat products, such as bacon, sausage, salami, dry cured meat, primarily from pork. Come and learn the skills needed to start your own journey into the world of these tasty artisan products. All the pork used in our classes is free farmed and we do not use any artificial additives or preservatives.
Classes are on Saturdays and run from 10am - 4pm with a charcuterie platter and beverages provided for lunch. Minimum class sizes will apply, so please read the terms and conditions and follow the link to our online shop to book a class. If the class has more than one date on offer, there will be a dropdown box to choose the date that suits you.
Meatatarian, May - September Classes
Dry Cured Bacon, One Whole Muscle Meat, Sausages & Salami.
This is a full day, hands on class where you will be taught the process of curing a whole muscle cut of meat and put this into practice by making your own dry cured bacon as well as one other cut of meat. This will be followed by salami making as a class.
We will then stop to enjoy a charcuterie platter for lunch, accompanied by a beer or glass of wine, before we go back to the kitchen and make sausages. You will do the entire process yourself, from grinding the meat to linking the finished sausages.
What you get to take home:
One Dry Cured Streaky Bacon
One Dry Cured Charcuterie cut to age in your own fridge
All of the sausages that you make (approx. 10)
A pack of pre-made salami & a casing pack to make your own salami at home
Full course notes with additional tried and tested recipes
